and Texas cuisine known as Tex-Mex. This pronunciation guide will help you navigate the menu at your next visit to a Mexican
restaurant.
Appetizers
- Salsa - A condiment typically made with tomatoes, onion, pepper
- Guacamole - A condiment made from mashed avacado and spices
- Chili con Queso (or just plain 'Queso') - A sauce made with cheese and spices-- usually served with tortilla chips
- Pico de Gallo - A salsa made from fresh chopped tomatoes, onions, and peppers
- Quesadilla - A delicious appetizer consisting of meat and/or cheese layered between two tortillas
- Nachos - Tortilla chips topped with cheese sauce and other tasty things-- meat, beans, peppers, etc
Breakfast
- Migas - Scrambled eggs-- scrambled with sauteed onions, peppers, and tortilla chips
- Huevos Rancheros - Literally: "eggs ranch-style"-- typically fried eggs served with tortillas and salsa
Lunch/Dinner
- Tortilla - A flat bread made with either wheat flour or corn flour
- Fajita - Marinated and grilled chicken or beef, usually served on a sizzling skillet
- Taco - A Tex-Mex sandwich-- made with a tortilla, folded and filled with almost anything (chicken, beef, shrimp, fish, beans, etc)
- Enchilada - Tortillas stuffed with a filling (typically meat or cheese) and smothered in sauce and cheese
- Burrito - A large tortilla wrapped around various fillings-- meat (chicken, beef, pork), rice, beans, lettuce, tomatos, salsa, and many other delicious things.
- Carnitas - A Tex-mex pork roast
- Chimichanga - A deep fried burrito
- Flauta - A small tortilla wrapped with a filling and fried until crisp
- Tamale - Corn masa dough (possibly with a filling), wrapped in a corn husk and steamed
- Frijoles - Pinto beans
- Borracho - A delicious, soupy, bean dish-- cooked with beer, pork, peppers
- Chili Relleno - A large pepper (like a Poblano) stuffed cheese, meat, and spices
- Carne Guisada - Stewed beef served over rice
Sauces
- Mole - A dark brown sauce made from dried chili peppers, spices, and chocalate.
- Verde - A tomatillo-based, green sauce
Ingredients/Peppers/Vegetables
- Chorizo - Spicy pork sausage
- Pollo - Chicken
- Poblano - A large, mild chili pepper, slightly more spicy than a bell pepper (3-6 inches long)
- Ancho - A dried Poblano pepper
- Jalapeņo - A small to medium sized variety of chili pepper (2-3 inches long)
- Chipotle - A smoked and dried jalapeņo pepper
- Serrano - A narrow, small to medium sized variety of chili pepper
- Habanero - One of hottest chili pepper varieties (1-2 inches long)
- Tomatillo - A small green fruit in the tomato family-- used in Tex-Mex green sauces
- Cilantro - A herb. The leaves are used in Tex-Mex cooking. The seeds are known as 'coriander'.
